Mondays and Tuesdays are reset days for me. I try to eat less than 50 grams of net carbs each day. I do this partly because I actually feel great when I do this and partly because weekends are unrestricted for me in all regards (drinking all the wine, eating all the queso, etc), so you know, balance. If you’re wondering how to calculate net carbs, first, download the MyFitnessPal app. I just use the free version. Your net carbs are your total carbs less your fiber. If you have any questions, shoot me an email and I’ll try to help. Here’s an example of what I might eat on a low carb day.
Lunch:
Romaine Chicken Salad


To make this quick, simple salad, I first pop some raw chicken tenders seasoned with Weber Salt Free Chicken seasoning in the oven at 425 degrees for around 25 minutes. While these are cooking, I chop up some romaine hearts, and give a splash each of Olive Oil and Apple Cider Vinegar. I add a large pinch of shaved parmesan and then season with Celery Salt and Pepper. Not pictured, I also add some chopped red onion, but you could totally leave this out. Once the chicken is done, I cut up 2 tenders, throw on my salad and devour.
Dinner:
Cauliflower Shrimp ‘N” Grits


While this may not look gourmet, hell it really doesn’t even look good, I promise it is and it couldn’t be easier. First I take out 6 Trader Joes Argentinian Shrimp and thaw in the sink. While these are thawing, I roast some broccoli at 425 degrees for roughly 25 minutes, give or take. I usually season my broccoli with Trader Joes Everything But the Bagel Seasoning. When the broccoli is close to being done, I pop half a bag of TJ’s mashed cauliflower in the microwave (when done, add a tiny bit of goat cheese, salt & pepper). The shrimp cook up quickly in a skillet with a splash of olive oil (seasoned with TJ’s chili lime seasoning). Then you just compile in a bowl, cauliflower mash, broccoli, shrimp and top with TJ’s Siracha Ranch. So, so good and pretty guilt free.
Speaking of guilt free, has anyone tried buying workout clothes from Amazon?? While I do love me some Lululemon & Athleta, I always feel guilty spending so much on workout clothes. Enter Amazon.

Macale is wearing a Small in both the bra and the pants.
